Why These Protein Pancakes Work
- Cottage cheese does the heavy lifting. It blends completely smooth, adds a big hit of protein, and makes the inside tender and custardy. Nobody can tell it’s in there.
- Oats become the flour. Blended gluten-free rolled oats give the pancakes real structure, no flour blend required.
- One blender, five ingredients. Fast enough for a school morning.
Tips
- Use certified gluten-free oats. Regular oats are often cross-contaminated with wheat.
- Let the batter rest 2 to 3 minutes before cooking. The oats soak up the liquid and the pancakes come out fluffier.
- Want even more protein? Blend in 1 scoop (20 to 25 g) of vanilla protein powder.
- Double or triple the batch for meal prep. They keep in the fridge for up to 3 days. Reheat in a skillet or toaster.
Serve them warm with maple syrup, fresh berries or a dollop of Greek yogurt, and tag @unbelievablygf when you make them.
