14 Tbsp (1¾ sticks) unsalted butter, softened
¾ cup granulated sugar
1 Tbsp vanilla sugar (or 1 tsp vanilla + 2 tsp sugar)
3 large eggs, room temperature
¾ cup plain yogurt
2¼ cups gluten-free flour blend
2 tsp baking powder
- Apples
3 to 3½ lbs tart apples (Granny Smith, Braeburn, or Pink Lady), peeled, cored & sliced
- Cinnamon Sugar Crunch Topping
1 Tbsp very soft butter
¼ cup sugar
1 tsp cinnamon
Directions
- Preheat oven to 350°F (180°C). Grease & line a 24cm springform pan with parchment.
- Cream butter, sugar & vanilla until light and fluffy. Add eggs one at a time.
- Mix in yogurt, then gently fold in flour & baking powder.
- Spread batter evenly into pan, layer apples on top.
- Combine topping ingredients and sprinkle evenly over apples.
- Bake 40–45 min until golden and a toothpick comes out clean. (Cover loosely with foil if needed & bake 10 min more.)
