4-Ingredient High-Protein Gluten-Free Bagels That Fooled Everyone

Screenshot

Confession: I never tell anyone these bagels are secretly gluten-free, and no one suspects a thing. Not the unsuspecting 10-year-old. Not the die-hard Glutenites. Nobody.

They’re high protein, they take four simple ingredients, and they come together so fast it feels like magic. An egg wash and a generous shower of seasoning crisp them up, and then you just let them cool… and fool.

Secretly Gluten Free Bagels

Why These Bagels Fool Everyone

  • Four ingredients. Gluten-free flour, baking powder, salt, and cottage cheese. That’s the whole dough.
  • High protein. The cottage cheese does double duty: it’s the moisture and the protein.
  • No yeast, no rise time. Mix, shape, bake. You can have warm bagels in well under an hour.
  • Nobody can tell. Chewy inside, golden outside, and they toast, slice, and hold a schmear like any bagel should.

The Four Ingredients

Screenshot
  • Gluten-free flour. I use Bob’s Red Mill gluten-free flour.
  • Baking powder. This is what gives them lift without yeast.
  • Salt. Just half a teaspoon.
  • Cottage cheese. You can also swap in Greek yogurt. For my bagel hearts I used half cottage cheese and half Greek yogurt, and they were just as good.

How to Make Them

Whisk the dry ingredients, stir in the cottage cheese until a dough forms, and knead it gently. If it’s a little sticky, dust your hands with flour. Divide it into four, roll each piece into a ball, poke a hole in the center with your thumb, and shape it into a ring.

Brush with egg wash, season generously, and bake at 375°F until golden brown. Let them cool at least five minutes before slicing. I know. It’s hard.

Shape Them Any Way You Want

Bagel Bites

Scoop small portions of dough, roll them into bite-size rounds, egg wash, season, and bake at 375°F until golden and firm. Perfect for snacks, parties, and lunch boxes.

Bagel Hearts

I shaped these into hearts for a Valentine’s lunch box treat and baked them at 375°F for about 25 minutes. Add a little cream cheese or butter for dipping. Whatever shape you choose, just adjust the baking time.

Topping Ideas

  • Everything bagel seasoning (the classic)
  • Sesame seeds or poppy seeds
  • Cheddar cheese and jalapeños
  • Smoked paprika and garlic powder
  • Lemon zest with dried thyme and rosemary
  • Toasted caraway and dried dill
  • Cinnamon sugar with a pinch of nutmeg, for a sweet version
  • Blueberries (drain them well and reduce the salt)

Should You Tell Them It’s Gluten-Free?

Some people say it’s better to label gluten-free up front. Others say it doesn’t matter if it tastes amazing. I know which side I’m on. Serve them first, and tell them later. Or never. Which side are you on? Tell me in the comments.

Make a Big Batch: The 32-Ounce Tub Dough

This is how I make it most of the time. One big tub of Greek yogurt, one bowl, and I have dough for four pizzas or about 14 to 16 full-size bagels. Make it once, keep it in the fridge or freezer, and pull off a piece whenever you want warm bagels or pizza night.

Big-Batch Ingredients

  • 1 tub (32 oz / 907 g) FAGE 5% Greek yogurt
  • 800 g gluten-free flour (1-to-1 blend or my Unbelievably GF blend)
  • 7½ teaspoons baking powder
  • 1 tablespoon kosher salt
  • Flour for dusting
  • Egg wash: 1 egg plus a splash of water
  • Toppings for bagels, or olive oil and flaky salt for pizza edges

Make the Dough

  1. Add the whole tub of Greek yogurt to a stand mixer fitted with the dough hook.
  2. Add the gluten-free flour, baking powder and salt.
  3. Mix on medium speed, scraping down the bowl as needed, until a soft dough forms.
  4. Turn it out onto a lightly floured surface, shape it into a smooth ball and cut it into 4 equal pieces.
  5. Cover and let it rest for 15 minutes. Gluten-free flour needs a minute to drink up the moisture. Let it rest, baby.

Use It for Bagels

Pinch off pieces, roll them into balls, poke a hole in the center and shape into rings (or bites, or hearts). Brush with egg wash, add your toppings and bake at 375°F until golden brown, about 25 to 30 minutes for full-size bagels. Smaller shapes bake faster.

Use It for Pizza

Roll each of the 4 pieces out very thin on a floured surface and move it to a parchment-lined sheet pan. Build a slight raised edge with your fingers. Brush with egg wash, salt the edges and par-bake at 325°F for 20 minutes, until set and lightly golden. Add sauce, cheese and toppings, then bake at 425°F to 450°F for 12 to 15 minutes, until the edges are crisp and the cheese is bubbling. Full story on my high-protein gluten-free pizza dough.

Store It, Freeze It, Thaw It

  • Fridge: wrap each dough ball tightly in plastic wrap and refrigerate for up to 3 days.
  • Freezer: wrap tightly and freeze.
  • Thaw: move it to the fridge the night before. Or, if you are using it today, thaw it on the counter.
  • Before rolling: let the dough come to room temperature, then roll it out and go.

Storage

Store leftover bagels cut in half in the freezer. They’ll last for months if no one eats them, which is unlikely. Bring them to room temperature or reheat gently in a toaster or oven.

Gluten-Free Bagel FAQ

Can I use Greek yogurt instead of cottage cheese?

Yes. Use the same amount, or do half and half.

Do these need yeast or rising time?

No. Baking powder does all the work, so they go straight from mixing bowl to oven.

Can I freeze them?

Yes. Slice them in half first, then freeze. Toast straight from the freezer or let them come to room temperature.

Can I make the dough ahead?

Yes. Make the 32-ounce big batch, wrap the dough tightly and keep it in the fridge up to 3 days or in the freezer. Thaw it in the fridge overnight or on the counter, bring it to room temperature and shape.

Can I make them smaller?

Absolutely. Bagel bites, mini bagels, even hearts. Just keep an eye on them and pull them when they’re golden brown.
