Hi, I’m Lisa Belle, founder of UnbelievablyGF. I’m a passionate recipe creator and the founder of MoonScoops, a bakery & ice cream shop I ran for 4 years in my hometown of Monterey, California, where we have more than 200,000+ customers happily deceived by our delicious gluten-free treats.
As a young girl, I grew up immersed in the love of homemade food. I helped my Italian grandmother and mother hand-make pasta, while my father always had a sourdough starter bubbling and fresh-baked bread ready for the table. Baking cookies and crafting specialty desserts was more than just a pastime—it was a cherished way of life that inspired my passion for creating joyful food experiences.
Once I was diagnosed with celiac disease, I embraced the challenge of reimagining my favorite recipes to be entirely gluten-free. This personal journey became a mission to ensure MoonScoops could be a welcoming place for everyone, offering incredible treats that meet the needs of those with food allergies. Today, MoonScoops is proud to be 100% gluten-free, delivering treats that are as inclusive as they are delicious.
Now, I carry on these traditions with my family, using food and treats as a way to connect and celebrate. Watching the joy sweep across someone’s face with the first taste of a treat is what fuels me.
My mission is simple: to prove that living gluten-free doesn’t mean giving up flavor, comfort, or joy. Whether it’s cookies, breads, or family favorites, I love sharing recipes that make everyone at the table feel included.
